Liver Bacon Snacks

The Liver that I transformed into a super delicious dish in this recipe comes from something special and that’s also the main reason I'm doing this BBQ Liver Recipe. I had my own 2 lambs on my stretch of land for a while and when I brought them to the butcher I had a giant pile of meat stored from these 2 lambs. I absolutely enjoyed the process but I've learned from this a great deal of respect for the cattle that you are raising so I want to reflect that kind of respect for the animals back into my recipes. These livers are a less popular cut of meat in the western world but I want to use absolutely everything from the animals that I’m raising so I came up with this recipe.
Beautiful liver bacon snacks, brined,smoked and grilled to perfection and strapped in bacon and cheese. The ultimate Barbecue Snack.

Ingredients
 

  • 600 grams lamb liver
  • 500 ml milk
  • 15 grams rosemary
  • 15 grams thyme
  • 1 tbsp sea salt
  • ½ tbsp ground black pepper

Seasoning

  • 3 tbsp fresh parsley chopped
  • 1 tbsp thyme coarse
  • 1 tbsp rosemary coarse
  • 2 sun dried tomatoes
  • 1 tbsp sea salt

Saute Onion & Garlic

  • 80 grams butter
  • 2 white onions chopped fine
  • 4 garlic cloves chopped fine
  • ½ tbsp sea salt
  • ½ tbsp ground black pepper

Instructions
 

  • Take the liver in it's whole and put it in a deep aluminium oven tray or something that let's it be submerged.
  • Add milk untill the liver is fully submerged.
  • Bruise up some thyme and rosemary. The amounts does not really matter.
  • Let it brine for 2 hours.
  • Pad them dry.
  • Slice it into long strips of liver.
  • Take a blender and fill it up with all the ingredients of the seasoning mix and grind it up.

Seasoning the liver

  • Mix with the liver strips. The tomatoes should make it stick, otherwise use a teaspoon of olive oil.
  • Heat up a pan.
  • Add some butter and let it melt.
  • Saute the 2 chopped onions and the chopped cloves of garlic.
  • Season with some salt and pepper.
  • Apply some of the saute onions and garlic on top of the liver strips.
  • Add a narrow strip of young gouda cheese.
  • Carefully wrap 2/3 strips of bacon around it.
