Cooking beef ribs Asado style is one of my favorite things to do. I admit it does take a little bit of patience and time but the results are worth it and in my opinion it’s fun to do and has a meditational purpose as well. Together with the purest salsa on this planet you get authentic flavors only with this beef rib recipe.Asado beef ribs always turn out with the perfect crust juiciness and texture and it’s all done by the power of fire and your own hands. Ingredients
- 1600 grams shortribs
- 1 tbsp Fleur de Sel seasalt
Salsa
- 6 tomatoes diced
- 1 red bellpepper diced
- 1 jalapeno chopped fine
- 1 white onion diced
- 1 clove of garlic chopped fine
- 1 tbsp fresh cilantro chopped fine
- 1 tbsp Fleur de Sel seasalt
Instructions
- Season your beefribs on all sides with a light sea salt like Fleur de Sel.
- Put the shortribs on the skewer in it's length.
- Fire up your BBQ with charcoal and wait for the charcoal to be fully lit.
- Bank the charcoal towards 2 sides.
- Let the skewer lean on the BBQ and let it roast in de middle with the lit almost closed to keep the temperature from rising.
- Make sure that you keep your charcoal lit by adding small amounts during the cook but without getting too much heat.
- Rotate it from time to time and keep an eye on it.
- If you have flare ups you can always choose to put aluminium trays in between the charcoal to catch the fat dripping.
- Roast for around 4 hours untill you reach a temperature of 92C/198F.
- Let ir rest for 10 minutes.
- Chop all the ingredients of the salsa and mix it up with some sea salt to taste.
- Slice into the beefribs and serve with some bread on the side.
